
Tasman Sea Salt
PERFECTLY DELICIOUS BAKED SALMON WITH PEPPERBERRY SALT AND LIME BUTTER
Tasmanians are big fans of Salmon, given they have some of the best salmon in the world grown right on their doorstep. All you need is a good quality side of Tasmanian Salmon with a few simple flavors and you have a meal to write about.
INGREDIENTS
Olive Oil
1 - 1.5 kg side of Salmon, skin on
3 tbsp butter, melted
juice and zest of one lime
one lime, sliced
Tasman Sea Salt's Pepper Berry Salt Mix
fresh parsley, chopped
Directions
Preheat your oven to 180 celsius
Take a piece of foil large enough to wrap around your side of salmon and place it on a flat baking tray. Spread a little olive oil over the foil (where the side of salmon will sit, to stop the salmon from sticking) and place the side of salmon on top
Combine melted butter, lime zest and juice in a bowl
Place slices of lime down the center of the side of salmon.
Drizzle the butter mixture over the salmon
Sprinkle lightly with Pepperberry Salt Mix
Enclose the salmon in the foil and place into the oven
Bake for approx 15-20 mins or until salmon is tender and pulls apart with a fork
Open foil and cook for a further 5 mins
Sprinkle with chopped parsley and a little more Pepper Berry Salt Mix (if needed)
Serve with a light salad or wild rice
