Ingredients:
Clams
Chopped Bacon
Chopped Garlic
Chopped Shallots
Chopped Celery
1/2 Chopped Habenero Pepper
Dudes Gulf Coast Seasoning
1/2 Land shark
2 Knobs of Butter
Tasman Wakame Seaweed Sea Salt
Lemon
Parsley
Directions:
Phase 1:
Heat a pan with olive oil and add the; Chopped Bacon Chopped, Garlic, and Chopped Shallots
Phase 2:
Add the; Chopped Celery and 1/2 Chopped Habenero Pepper
Next add the Dudes Gulf Coast Seasoning
Phase 3:
Next add the clams, 1/2 Land shark clams and 2 Knobs of Butter
Then add a lemon rind
Then wait for the clams to pop open
Phase 4:
Serve up on a plate, first the clams and then the veggies and broth
Phase 5:
Garnish with parsley
Finish with Tasman Wakame Seaweed Sea Salt

Blackened Tuna With Mango Salsa

Ingredients:
Tuna
Filet of Tuna
Dudes Blackened Seasoning
Mango Salsa
1/2 Cup red onion
1/2 Cup Tomato
1/2 Cup mango
4 shredded basil leaves
Handful of chopped Bean Sprouts
4 oz soy
1 oz evvo olive oil
Juice of 1 Lime
Finishing
Tasman Wakame Sea Salt
Wasabi Cream Sauce
Directions:
Tuna
Shake the Dudes Blackened Seasoning on both sides of the Tuna Block
Heat your pan very hot and add the olive oil
Sear the Tuna for 20 seconds on each side (Pink in the middle)
Mango Salsa
Add all the ingredients for Mango Salsa (above) and mix
Plate it
Fan out the Tuna on a plate with wasabi cream sauce
Add the Mango Salsa
Sprinkle the Tasman Wakame Sea Salt on top

Dudes Smoked Pit-master Chicken

Ingredients:
Whole Chicken Breast
Dudes Pit Master Seasoning
Tasman Smoked Sea Salt
1 Stick of Butter
Directions:
Flip the Chicken on its front
Cut on each side of the spine and remove the spine
Pull up the skin to make pockets
Take one sick of melted butted and Dudes Pit Master Seasoning
Fill the pockets with the butter mixture
Rub the rest of the mixture on the outside of the chicken
Sprinkle additional seasoning for flavor
Finish with Tasman Smoked Sea Salt
Heat up the grill charcoals
Placed soaked cherry wood pieces on the charcoals
Smoke approximately 2- 2.5 hours

Salad
Red Leaf Romaine
Roasted red onions and cherry tomatoes
1 Cucumber seedless
Blue Cheese Crumbles
Seasoned Almonds
Directions:
Mix the ingredients and finish with Tasman Pepper Berry Sea Salt

3/4 Stick butter

Ingredients:
6 eggs
1/3 red and green pepper
1/2 shallot
1 Clove Garlic
6 Chopped Shrimp
Dude's Blackened Seasoning
A Sprinkle of TASMAN SMOKED SEA SALT
Cotija Cheese for finishing
Directions:
Oven preset 400 degrees
Heat your skillet with butter
Add shrimp, garlic, shallot, red and green pepper to the skillet
Stir until the veggies wilted
Add Blackend Seasoning from Dudes Gourmet
Add TASMAN SMOKED SEA SALT
Stir for a few minutes
Add scrambled eggs
Constantly scrape the bottom, so it doesn't stick
When it turns a little solid, make one last stir to even it out
Place in the oven for 15-20min
Sprinkle with Cotija Cheese and serve
